How to Grill Your Clover Farms Bundle
Every cut in this bundle is built for the grill but each one has its moment. Here's a quick guide:
Outside Skirt Steak: High heat, fast cook. 2 to 3 minutes per side over screaming hot coals or burners. Pull it early, rest it, and always slice against the grain. Don't overthink it.
New York Strip: Let it come to room temp first. High heat, 4 to 5 minutes per side, pull at 130° for medium rare. Rest 5 minutes before cutting. Butter baste if you're feeling fancy.
Top Sirloin Baseball Cut: This one's thicker so give it time. Sear over high heat to get the crust, then move to indirect heat to finish. Pull at 130° to 135° and rest before slicing against the grain.
Ground Beef and Carnivore Blend: Smash burgers, classic patties, whatever you want. Don't press them on the grill. Let the fat do the work.
**Grass-finished beef has a cleaner fat profile and more nutrients than grain-fed, which means it can cook a little faster than you might be used to.
