How to Use Your Grass-Fed Picanha Roast
The Picanha Coulotte Roast is incredibly versatile and shines when cooked low and slow or roasted hot and fast. It’s excellent for oven roasting, grilling over indirect heat, or even reverse-searing for ultimate tenderness. For a traditional Picanha-style roast, score the fat cap, season generously with salt, and start cooking fat-side down to render and baste the meat naturally. This roast can be served whole and sliced, or cut into thick steaks or cubes for skewers after cooking. Always allow the roast to rest for 10–15 minutes before slicing, and be sure to cut against the grain for the most tender, juicy bite.
