Mini Meatloaf Recipe

Ingredients
  • 1 lb Clover Farms Carnivore Blend (also known as Ancestral Blend)
  • ½ cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg
  • ½ cup ketchup or homemade marinara (plus extra for topping)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp parsley

Instructions

  1. Preheat oven to 375°F.
  2. Combine all ingredients in a large bowl, reserving a few tablespoons of ketchup or marinara for the topping.
  3. Divide the mixture into silicone molds, muffin tins, or small loaf pans.
  4. Top each loaf with a spoonful of ketchup or marinara.
  5. Bake for 20–25 minutes, or until cooked through (internal temperature of 160°F).
  6. Rest for 5 minutes before serving.
